Green Pea Soup (Matar Ka Shorba)
Green Pea Soup: This is another contemporary way of preparing dal curry using fresh or frozen peas. The more common variations use the whole dried green peas.
Serves 4-6 people
Ingredients:
- 2 cups Green Peas (Fresh or frozen)
- 3-4 tsp ghee or oil
- 1 medium red onion, finely chopped
- 4 cloves garlic, minced
- 2-inch piece ginger
- 1 tbsp mint, chopped
- 2 tbsp cilantro, chopped
- ½ tsp cumin seeds
- 2 Bay leaves or 4-5 curry leaves
- 1 cardamom pod, crushed
- 1 stick cinnamon Cilantro to garnish

Method:
1) In a medium saucepan bring water to boil over high heat. Also, prepare a bowl of ice-water to dunk the peas into.
2) Only when the water is boiling, add the peas and let it boil for 5-minutes or until tender. Drain and dunk into cold water. Drain and puree in a food processor until smooth.
3) In a medium skillet, heat the ghee, butter or oil over medium-high heat. Once heated, add the cumin seeds, bay leaves or curry leaves, cardamom, and cinnamon.
4) Add onions and stir to coat the spices. Continue to cook for several minutes.
5) Add garlic, ginger, mint, and cilantro and stir to combine. Continue to cook for about 2-3 minutes.
6) Lower the heat and add the peas puree and water as necessary to dilute to your preferred consistency.
7) Taste and adjust to your desired consistency. Pairs well with – good on its own or any variation of flatbreads or with steamed Basmati rice.
