Garlicky Prawn Pan Roasted

Garlicky Prawn Pan Roasted: Shrimp are known as prawns in India. This seafood dish is prominent and popular among the coast of Malabar especially Goa and Kerala, where there is a local fishing community.
Serves 4-6 people





Ingredients:
  • 1 lb large shrimp, peeled and deveined with tails on
  • ½ tsp ground turmeric
  • 1 tsp cayenne or hot paprika
  • 6-7 garlic cloves, coarsely chopped or smashed
  • 4 tbsp dried unsweetened coconut, reconstituted
  • 2 tbsp sesame seeds
  • 1 medium tomato, coarsely chopped
  • 3 tbsp oil of your choice
  • 1 tsp salt or to taste Fresh cilantro, rinsed and chopped for garnish
Method:
1)  In a medium-sized bowl, toss the shrimp with the turmeric and cayenne or hot paprika. Set aside for approximately 15-20 minutes to absorb the flavors.
2)  Make a paste of garlic, coconut, and sesame seeds, either by using a pestle and mortar, or a food processor.
3)  In a large skillet, heat the oil over medium-high heat. Once oil is hot, add the coconut paste and cook for 2 to 3 minutes.
4)  Add the tomatoes and sprinkle with salt. Cook for 3 to 4 minutes until tomatoes start releasing juice and the mixture appears saucy.
5)  Add the marinated shrimp to the mixture and cook uncovered stirring occasionally for 5 to 7 minutes until the shrimp is cooked through.
6)  Taste and adjust salt. Garnish with fresh chopped cilantro and serve.
