crispy chicken with Pineapple - Salsa Recipe Healthy Fitness
Serves 3-4
- 250 gm chicken - cut into 1” pieces
- 2 slices of fresh or tinned pineapple - chopped, 1 fresh pineapple, optional
- 1 onion - cut into 8 pieces, 15-20 basil leaves - shredded
- 1 tbsp tomato ketchup, 1 tbsp stir fry sauce, 1 tsp honey
- a pinch of salt & pepper, or to taste
MARINADE
- 1 egg, 2 tbsp finely chopped lemongrass, 1 tsp chopped garlic
- 2 dry red chilies, 1 tbsp white wine, ½ tsp pepper
- ½ tsp salt, 2 tbsp cornflour, 1” stick cinnamon (dalchini )
- BATTER
BATTER
- ¼ cup rice powder, ½ cup cornflour, 1 tbsp oil, ½ tsp soya sauce
- 1 tsp red chili flakes, ½ tsp salt

- Mix all ingredients of marinade in a flat bowl and add chicken to the prepared marinade. Keep aside for 5- 6 hours.
- Mix all ingredients of batter in a bowl. Add enough cold water to get a thick coating batter
- Heat oil in a kadhai. Dip each piece of marinated chicken in the batter so that thick coating covers the chicken, covering on all the sides. Immediately deep fry till golden brown.
- Heat 1 tbsp oil. Add onion and cook till soft. Add pineapple pieces and basil leaves and stir for 2 minutes.
- Add honey, tomato ketchup, stir fry sauce, salt, pepper, and mix well.
- Add fried chicken and mix well. Serve hot in a hollowed warmed pineapple shell or in a bowl.
