Serves 4
- 1 cup uncooked rice (3 cups cooked rice)
- 3 tbsp oil
- 1 tbsp finely chopped garlic, 1 onion - finely chopped
- 2 green chilies - chopped, ½ tsp aji-no-moto, ½ cup chopped cabbage
- 1 capsicum - finely chopped
- 1 small boneless chicken breast (125 gm)
- 2 tsp salt, ½ tsp pepper powder, 2 tsp soya sauce

- Wash rice. Strain and leave in the strainer for 10 minutes. Boil 5-6 cups water with 1 tsp salt and 1 tsp oil. Add rice and boil for about 7-8 minutes till almost done but firm to bite.
- When done, the strain spread on a tray. Cool under a fan. Rice should remain separate.
- Boil 2 cups water with ½ tsp salt. Add chicken and cook for about 5 minutes till soft and no longer pink from inside. Remove chicken and shred thinly into strips.
- Heat oil in a wok. Add garlic & stir. Add onions & fry onion till very light brown.
- Add green chilies and aji-no-moto.
- Add cabbage and capsicum and stir fry for 1-2 minutes.
- Add boiled shredded chicken. Saute for a minute. Add salt and pepper.
- Add soya sauce. Mix well.
- Add rice. Mix well. Stir fry for 3-4 minutes. Mix & remove from fire. Serve hot.
